New
Restaurant Opening In Bellevue Hyatt Footprint |
Bellevue
– After months of speculation, the reality
of breaking ground on a new restaurant is at hand
for Chef Dan Thiessen. This week’s demolition
of the former Chadfield’s restaurant in the
footprint of the Hyatt Regency Bellevue has commenced
to make way for the 0/8 Seafood Grill and Twisted
Cork Wine Bar to occupy 7,600 square feet, seating
225 guests. The $2.4 million remodel is expected
to be completed pre-Holiday 2006.
This
concept combines two elements into a single vision
between Thiessen and Matthew Bomberger, owner of
the Twisted Cork Wine Bar. Thiessen named the restaurant
for the date he and his wife Erika were wed.

The
space for 0/8 Seafood Grill, and Twisted Cork Wine
Bar, will be all about a guest’s sensual journey.
The color palate is a seamless blend of sea tones
in the lower strata, sky tones in the ceiling areas.
Greeting guests will be a fluid art feature. Intimate
areas, flexible sections, private dining rooms for
parties up to 100 and open spaces will ebb and flow
depending on the needs of the day’s diners.

Seafood Grill will serve dinner daily, lunch Monday
through Friday. With a base menu of 20 appetizers,
a range of sharable selections and a full compliment
of main course seafood and meat offerings, meals will
be in constant transition serving each diner’s
wish. Weekends will be a celebration time with the
Eastside’s only weekend buffet and prix fix
brunch, served on Saturdays and Sundays from 9:30
a.m. to 2 p.m. |

Twisted
Cork Wine Bar will serve as a platform for discovery,
with 70 wines available by-the-glass, 20 of which
are Champagne and sparkling selections, and a cellar
containing 300 bottles. Seating will be available
at the bar, as well as at tables in close proximity
to the bar, and in the one of a kind Champagne Lounge.
A menu of appetizers, cheeses
and desserts is being created, with wine in mind,
for perfect pairings. Weekly wine events, five nights
a week live entertainment and an extensive list of
wine flights and crafted cocktails round out the lounge
activities.
All
this focus on the high touch aspects of the restaurant
does not mean that 0/8 Seafood Grill will not exude
highly interactive elements. A sophisticated guest
relationship management tool will give the staff insights
into every customer’s whim. Guests will also
have wireless access to the Internet, enabling them
to build online wine wish lists and take individual
tasting notes online in real time through the restaurant’s
website. |
